10 minutes preparation + 5 minutes cooking (freezing time extra)

½ cup castor sugar
750g watermelon flesh, seeds removed
2 tablespoons lemon juice
Put sugar and water in a saucepan and bring to the boil for 5 minutes then cool. Puree watermelon flesh in a blender. Add sugar syrup and lemon juice and mix well. Put into a tray and place in freezer. When the mixture starts to set, remove from freezer and blend well or mix it with a fork, then place it back in the freezer. Remove from freezer 15 minutes prior to serving. Spoon into serving glasses.
This can be made in an ice cream machine, following manufacturer’s directions.
Substitute stewed or canned fruit, which has been well drained and increase lemon juice to 3 tablespoons.
