Use in stir-fries, salads, vegetable side dishes, frittatas and all short-time cooking dishes.
Varieties include:
Cathedral: Small, light green and similar to common broccoli with florets resembling pine cones
Common: Green with clusters of compact florets forming a head
Selection:
Choose tight compact heads with blue/green colour.
Storage:
In an airtight bag in refrigerator crisper. Use as soon as possible after purchase.
Cooking:
Boil or steam for 4-7 minutes, depending on size of floret. Microwave in a covered dish with 2 tablespoons water on HIGH (100%) for 4-5 minutes until tender, stirring after 2 minutes to ensure even cooking.
Serving suggestion:
Stir-fry sliced broccoli florets in a small amount of oil with sliced almonds or cashew nuts. When broccoli is tender add soy, oyster or chilli sauce to flavour.
