An Italian appetiser – toasted bread topped with fresh chopped tomatoes, garlic, basil, and olive oil.
7 minutes preparation + 10 minutes cooking

4 slices crusty bread, cut into 2-3 cm thick slices
2 cloves garlic, peeled and halved
2 teaspoons olive oil, warmed
2 medium ripe tomatoes, sliced
1 tablespoon red or white onion, finely diced
A few fresh basil leaves, torn into small pieces
Lightly toast bread on both sides under grill or in a hot oven at 200°C for 10 minutes each side. Rub both sides of bread with garlic and brush with oil. In a small bowl mix onion and basil. Place slices of tomato on each piece of toast and top with onion and basil mixture. Serves 2.
