Selection: Choose plump firm cherries with fresh green stems. Avoid over ripe and split fruit.
Storage: Wash just prior to using. Store in airtight container under refrigeration for a short time only.
Serving suggestion: Combine poached cherries with reduced-fat Ricotta cheese and a little grated nutmeg. Use mixture to fill a crepe or sandwich hot cakes. Drizzle with reduced cherry liquid before serving.
