Use in stir-fries, salads and vegetable side dishes.
Varieties include:
Green or French: Bright green beans
Butter beans: Creamy yellow colour, use as for green beans
Runner beans: Larger than green beans, trim sides and slice diagonally
Broad beans: Remove beans from shells, cook as for other beans
Selection:
Choose firm, unblemished beans.
Storage:
In an airtight bag in refrigerator crisper.
Cooking:
Boil or steam for 4-5 minutes. Microwave in a covered dish with 1 tablespoon water on HIGH (100%) for 4-5 minutes depending on quantity, stirring after 2 minutes to ensure even cooking.
Serving suggestion:
Cook beans. Gently heat a small amount of olive oil in a pan. Stir in some finely chopped fresh mint leaves then toss with the beans for 1-2 minutes. Serve as a vegetable side dish.
